Cooking with White Mountain® Kettle Corn
WMKC is a delicious crisp, little-bit-sweet, little-bit-salty addition to many recipes. One word of caution, add your dose of WMKC last, after all moist ingredients have been incorporated into the dry ingredients. Then gently fold this mixture into the kettle corn.
Whoop-De-Do-Dah WMKC Marshmallow Squares
You can have this take on traditional crisp squares put together quick as a wink, including an optional topping such as nuts or a drizzle of your favorite topping!
Ingredients:
- 2 Tablespoons margarine
- 4 Cups small marshmallows or 1, 10oz package large
- 10 Cups WMKC
Preparation:
- Prepare a pan or cookie sheet (approx. 10”x14”) by lightly coating the bottom with a non-stick spray.
- Place the WMKC in a large bowl.
- Melt the margarine in the microwave in a good-sized glass bowl.
- Fold the marshmallows into the melted margarine and microwave at 1 min. intervals (to avoid a marshmallow explosion – egad!) until the mixture is soft and creamy.
- Immediately, pour the melted mixture over the WMKC, gently folding it into the popcorn with a rubber spatula. Be prepared: it will be gooey.
- Press the mixture into the prepared pan using a spatula or a sheet of waxed paper.
- Leave plain or decorate with chopped nuts (press in) or a drizzle of melted chocolate (we love the minty ones) or butterscotch bits.
- Cover lightly with plastic wrap and pop into the refrigerator, or, better yet, the freezer for ½ hour or longer, if desired, to set up.
- Remove from the cold and reverse the pan to allow the squares to drop out onto a cutting board. Cut the cold squares with kitchen shears or a sharp knife. The squares can be stored in a closed container in a cool location or frozen for later use.

Butterscotch Crunchies
Need a sweet thing in a hurry? Here’s one for you!
Ingredients:
- 1 pkg (12oz) butterscotch morsels
- ½ Cup peanut butter
- 1 Cup small marshmallows
- 10 Cups WMKC
Preparation:
- Melt the butterscotch morsels over hot water or in the microwave (start at 1 minute about 70% power)
- Add the peanut butter and heat until soft; mix until smooth
- Stir the marshmallows into the warm mixture
- Very gently, fold the warm ingredients into the WMKC
- Drop by the tablespoon–full onto waxed paper, and chill until set
- For a variation, try mixing peanut halves and/or chow mein noodles in with the WMKC before folding in the warm ingredients
